My son loves mini loaves so I’ve been making a bunch of different ones for him lately and he has really loved these ones so I thought I’d share the recipe with you all! They are super simple and they’re really quick to make!

Ingredients – Makes 10-12 mini loaves

  • 2 medium sized apples (I used Granny Smith)
  • 3 tbsp of butter
  • ¼ cup of brown sugar
  • 1 tbsp of cinnamon
  • 2 cups & 2 tbsp of all purpose flour
  • 1 tsp of baking soda
  • A pinch of salt
  • 1 large egg
  • ¾ cup of milk
  • ¼ cup of canola oil
  • 1 tbsp of black chia seeds (optional)
  • Handful of oats to sprinkle on top


  1. Preheat your oven to 160℃ and grease your baking pans
  2. Peel and slice your apples (and cut out the middle but where the seeds are)
  3. Put your apple, butter, brown sugar and cinnamon in a pot and cook over a medium heat until the apple is soft
  4. Mix your dry ingredients, flour, baking soda, chia seeds and salt, in a large bowl and set aside
  5. Whisk your wet ingredients, egg, milk and oil, in a smaller bowl and mix in your apple mix once it has cooled a bit
  6. Add your wet mix to the dry mix and combine with a wooden spoon
  7. Spoon your mixture into your loaf pans and sprinkle some oats on top then pop it in the oven
  8. Cook your loaves for about 20 minutes then set on a cooling rack

These loaves are the perfect size for a lunchbox snack so I always freeze them, and then get one out before bed so I can send one to school with Archer the next day! I’ve been making so many types of sweet and savoury loaves lately because they’re Archer’s favourite so I’ll probably have a few more loaf posts coming soon!       I just got mine from Kmart, but that’s an Australian store. I’m not sure what uk stores sell them!
